This literally means “cannot think” or “un-thinkable.” It’s not just “I don’t want to think about it,” it’s “This is so wild/awful/amazing, it’s outside the realm of possibility.”
We use this when you hear the most loyal guy in the crew snitched. “Gino? A rat? Unthinkable! (ジーノがタレコミ屋？考えられない！)”
This is like seeing Biggie and Tupac sharing a drink… yesterday. Your mind just rejects it. It doesn’t compute. It’s not just unlikely, it’s straight-up unthinkable. That’s kangaerarenai.

This is the negative potential form of 考える (kangaeru, to think). You just take the thing that’s blowing your mind (a noun, or a whole sentence) and say it’s kangaerarenai. Using なんて (nante) after the thing adds extra “wow, that’s crazy” emphasis.
